The farm “Antico Borgo La Torre S.S.A.”, authorised for agritourism, has 32 ha of land, comprising around 10 ha of vineyard, 1 ha of olive groves, 10 ha of arable land, 9 ha of woods and the remaining an orchard and walnut trees. The farm mainly produces wine and olive oil. All production is according to principles of integrated farming
Our excellent Chianti DOCG is predominantly made from Sangiovese grapes and, to allow for added complexity of flavour, we add a small proportion of Canaiolo, Merlot and Cabernet Sauvignon. For our white Tuscan wine IGT we use Trebbiano, Malvasia and Vermentino grapes. The wine is exclusively produced and bottled at the farm.
Our vineyard, which we continuously renew and replant, is in the hills on the estate at around 150-180 m over sea level, sloping slowly down towards the valley of the Resco river.
No herbicides are used when working the land. To protect the grapes from fungal diseases we exclusively use products based on copper and sulphur.
The grapes are entirely hand-picked allowing only the best grapes to be selected for our quality wine.
We make our wine in the farm's own winery located at the underground level of the 18th century building 'the granary'. Stainless steel and traditional concrete tanks are used during vinification. Stainless steel barrels for storing the wine prior to bottling are fitted with a nitrogen system. Since 2019 we have added oak barrels to allow for a greater richness of taste. The total storage capacity is 500 hl.
After the harvest the grapes are filled into the tanks with help of gravity, using the different levels between the outside courtyard and the partially underground level of the winery. The traditional building with thick stone walls and the winery being partially underground enable fermentation and storage of the wine at a constant temperature of around 18°C.
Antico Borgo La Torre is a family business, run with passion and dedication. The farm has been in the family's ownership for centuries, and in 2020 the management passed to the new generation, John Larsen and Federica Castellani, under the guidance and support of Federica's father, Castellano Castellani.
